I define myself as an autodidact with nevertheless a solid base. I did my schooling at the Lycée Hôtelier in Strasbourg / Illkirch (now Alexandre Dumas) followed by a business school in Colmar.
Rocker at heart at 17, I was lucky to spend a few days in London at my friend Richard Bellia (Stars photographer), which triggered in me this thirst for new experiences and work perfectly executed.
Many internships have completed my training, La Cheneaudière in the time of Jean Paul Bossée, Jean Luc Soisson (former chef starred) several times in my kitchen, Nicolas Rollet in Pastry and Chocolate, Thierry Delabre (Panadero Clandestino) in Bakery and baking natural leaven without forgetting my friend Clément Fleck.
I also know the profession of breeder / cheesemaker that I have spent several years with my parents, especially in the manufacture of goat cheeses and their marketing.
In the year 2000, with Cynthia, my wife, we bought the family restaurant that we are constantly evolving with notably obtaining the title of Maître Restaurateur in 2012
